This is- one of those meats that has to be marinated to tenderize or cooked along time. There are plenty of recipes out there. My family likes this for fajitas. And it even cooks up well in the crock pot with potatoes, onions , and carrots. I cut it up before its cooked which make it far easier to use for tacos, and fajitas or like beef tips and gravy.
There is a lot of fat that you don't see until you open the package. There are two pieces. You have to cut away the fat and membrane before cooking. The taste is good. I made fajitas and also made steak picado. The longer you cook on a pan, the softer the meat gets. For fajitas, marinate in ready made tang and spices overnight if possible to soften for BBQ.
I tried to post pictures but Walmart app wouldn't allow it. Beef skirt has to be trimmed because it is connective tissue that is too tough to eat. I cut of 4.55 ounces of fat and could have done more. That's $3.57 wasted. I bought 3 packages of this beef skirt and they all look the same. Next time I will go to a meat market.

I am a very regular customer of Walmart and am mostly pleased with my orders. However, while I am typically happy with the meat selection AND price at Walmart, I am VERY dissatisfied with what I was charged for flank/skirt steak vs what I just received. The cost on my receipt stated $8.42/lb and the label stated 1.37 lbs on the package, equaling $11.54 for the package. However, when I opened the package, it was abundantly apparent that there was a significant amount of FAT that accounted for the weight on the label...4.0 oz to be exact (image attached). I am in hopes this was an oversight and would very much appreciate a response. Thank you for your time.
Underside of meat was untrimmed. After removing nearly 1 pound of fat and silverskin, I noticed some browning of the meat! Now, there was not enough meat left for my recipie so, I went to a different grocery store and bought another steak. Very disappointed.
This is by far the worst cut of meat, however, it's the best piece of fat I ever ever purchased (sarcastic) DON'T buy this cut, it was nothing but fat!!
all fat! the cut i was provided was absolutely unusable. and of course the meat counter hides it by flipping it over so you don't see it when you're purchasing it and I don't realize it until I'm in the middle of making dinner. so now i don't have anything else to use but I have this piece of meat that's supposed to be 1 and a half pounds but after I cut off all the fat it's more like 0.2 lb
I ordered two skirt steaks for carne asada. One of them was a normal amount of trimming The other was more fat than meat and took an excessive amount of time to trim. The butcher that packaged that should have seen how little meat was there. I called the number when the AI refused to refund the one bad package; and was greeted by an AI (key word Artificial) "phony" Assistant. I had already opened, trimmed (which is how I discovered it was more fat than meat) and started marinating the skirt steak for my diner tonight. Below I include images of the package after trimming/preparing for marinade. I could not see the fat content that was hidden on the underside of the meat until I opened it.
