Blue Diamond Toxin-Free Ceramic Non-Stick Cookware Set, 4-Piece

I was looking for a replacement pan and finally found a good size with a lid. Great heat distribution and consistency, non stick. Great size to cook for my family and friends quickly. I'll definitely look at blue diamond pans for future replacements.

This set is great! You don't need oil for basic sautéing. If anything sticks you add a bit of water. Make sure to wash with mild soap and dry immediately. Do not use olive oil in this pan to avoid oxidation. [This review was collected as part of a promotion.]

The first thing I wanted to try in my new pan was stir-fry. Boy-oh-boy what a difference this pan made. The ingredients didn't stick to the pan and I felt like a professional cooker. I actually like this pan better than the copper pan I own. The pan heated up quickly and cleanup was easy. The steamer tray and skimmer are an added bonus. I haven't had a chance to use those yet, but did use the pan for grilled cheese sandwiches and also spaghetti sauce with no sticking at all. I will purchase additional pieces. The greatest test of any pan is whether or not eggs stick! I have tried scrambled and fried, and every time, the eggs released easily. I have only owned the pan for a few weeks so I can't speak to the longevity and durability of the non-stick surface. The pan comes with very detailed directions on how to care for the non-stick surface and I plan to follow them--having a VERY non-stick pan is going to be worth the extra attention. The pan is lightweight, which is an advantage if you live with kids/teens/elderly who like to cook. I don't fully understand why it came with a 'spider' (handheld strainer). A pan-safe spatula would have been more useful. I like the steamer tray, which I have used to steam dumplings, but it would be great for veggies or fish, too. This could be my new favorite pan. A few of the things I really like are the size, the non-stick coating, and the way it cleaned up after use. I cooked chicken the first time and the chicken cooked evenly and didn't tear when flipping, so I didn't have bits of overcooked chicken and larger pieces of under cooked chicken. It may have been the best chicken I've ever cooked! I then cooked about a pound of freshly chopped veggies - peppers, onion, squash and broccoli. The pan was large enough to cook all of the veggies without having to divide up in shifts. The lid let the veggies steam so they were cooked perfectly. The only downside I saw with this pan is the handle heated up.. It wasn't too hot to touch, but definitely warm.I used a towel to grab it with just in case, I didn't want to burn the palm of my hand. The pan washed nicely, I did not put it in the dishwasher. I didn't have to scrub excessively and it didn't leave any discoloration. [This review was collected as part of a promotion.]

While the pan looks good, its non stick feature is bogus. It cleans up well, but everything I've attempted to cook in the pan I purchased from the Prescott, AZ Walmart sticks to the cooking surface. I will not purchase another Blue Diamond pan. Hopefully, your experience is better than mine. I suggest finding a better product.
