Amaranth
These should be toasted in a hot pan before eating for the full flavor. These are tiny and can easily burn. Only try and toast up in small batches to reduce the chance of burning these. I use a big pan for about 1/4 cup of raw. Taste great on yogurt. Photos show toasted and raw amaranth. Very aromatic after toasting..Raw seeds have an earthy smell.
