We have been trying different recipes to make gluten free breads. This flour helps the bread be less dense and more fluffy!

I love Teff!

As a first time buyer of teff, I quickly criticized once I received it because it resembled sand. Once, I cooked it (learned on YouTube)I fell in love with it. My grandmother even loves it. We eat it for breakfast every other day. I add nothing to it( no sugar, fruits,etc) and it simply tastes divine. One thing to keep in mind, rinsing the teff before cooking is a definite MUST.

Hearty and comforting

This was the first grain I tried on my new quest for healthier grains. I tried to clean it like the instruction said. Nope. I used a coffee filter to drain them. Took a long time. I don't rinse them anymore. Seeds are too tiny to use a sieve. Flavor is AMAZING! I eat it as a hot cereal and it is so comforting. Feels like cream of wheat but has a totally different flavor. Earthy and very delicious.

I ground the grains into flour. Mixed 1 cup of flour with a scant cup of filtered water. Ignored it for 3 days (alright, I peeked at it a few times). Poured the water off and mixed in 1 tsp baking powder 1/2 tsp salt 1 T dried onions Poured into a 10", preheated pan (between medium and medium high) lightly covered with olive oil. Cooked it until all but the center looked done and bubbly. Let it get a bit crunching. Then flipped over for maybe 2 minutes. It made 3 pancakes. I ate the first two before the 3rd was done. Need I say it was YUM! Tangy yet somewhat earthy? As soon as I finished, I started a new batch. Perhaps this time it will last long enough to put some lentils or rice on them?

Teff for breakfast. Yum!

I purchased Whole Grain Teff to be used as a hot cereal for breakfast. The texture reminds me of Cream of Wheat. I found it to be very enjoyable. I believe you can toast it slightly in the pan before you add the water, and it will have a nuttier taste.

Something this useless shouldn't be so expensive

I bought this to make injera. Unfortunately it can't be used for that since it's too small to be ground using equipment that the typical cook would have at home, to the point that I can't even understand the purpose in selling it. At the very least the packaging should have warned about this, or at least tried to offer alternative ideas for its use rather than porridge.
