They maintain the shape of the crust in the pan very effectively for baking.

Ceramic Balls Pocketed and Stuck to the Pie Crust
I don't know what the deal with pie weights is, but these did not work as described. I used some lentils (1/3 of a pound) last time I blind baked, and it was perfect; but these ceramic balls were so heavy they baked into the frozen pie crust leaving pockets. When I tilted trying to save the pie crust everything including the pie crust. Don't use these, use lentils. ALSO when I got the back I think it was ceramic that had a lot of powder in the bag. Obviously I washed it, but I wonder if I'll would be eating that powder and if it's safe when the balls get stored together. Just something to think about.
