This is the perfect eggplant for ratatouille like the movie! One of my families favorite veggie rich foods are ratatouille and I like using Chinese eggplant for it because it gives beautiful, round, uniform slices that are a similar size to my other squash and tomatoes. If you want a lovely baked ratatouille get this one! The flavor is perfect and so is the texture

It is an unusually big size. Is it artificially grown? I'm concerned of consuming it in case it was grown full of hormones. I have never seen a Chinese eggplant this large. I'd rather not take the chance.

These are left overs after Costco and Safeway had picked all the 8 to 12 inch long eggplant. So you'd get 3 to 5 inch eggplants for 3.31 each piece.
