Great healthy organic bread flour. If you are used to regular white flour this is much different in texture and behavior. It's less cohesive than regular white flour, and there is a texture to it. It also will not rise as much. What you will get in the end is a dense healthy loaf of bread. Taste is great! What you would expect. Having been to Europe and not having any issues with their bread, I think definitely getting unbromated flour is the key!! If you are looking for health benefits but something that acts more like regular white flour, you can mix this 50 /50 with your usual white flour.

I used this 7 grain bread flour blend to bake a loaf of bread. This 7 grain bread flour made the most delicious bread that I have ever baked. I am a novice bread maker so I wasn’t sure if I should use it like regular whole wheat flour or not. I found a recipe for 7 grain flour bread and it called for vital wheat gluten so I added it. I used my bread making machine to make the dough and then put it into pans to bake. I made two small loaves and they were so good!! Sometimes whole wheat can have a bitter taste but this has a nutty sweet flavor to it. I will definitely buy it again !!

While pricey, this flour is made from seven different organically grown grains (wheat, rye, rice, corn, oats, millet, and barley). It made a delicious bread that is hearty but not heavy using a recipe for whole wheat bread.

This is a high-quality organic product with wonderful flavor and freshness. I love the resealable packaging. I used it to make a loaf of crusty bread; it is rich earthy and 7 grain delicious.

I had high hopes for this flour as a bread flour. I am an experienced sourdough baker and I’m always looking for ways to bake nutritionally dense loaves since my kids love to eat my bread. While this flour lends a dense, hearty flavor to the bread, it acted like any standard wheat flour. The texture was very rough and grainy and it was difficult to develop and hold the gluten structure in the bread. No protein percentage was listed on the bag (most artisan flour producers will do this) so I had to guess based on some calculations I found online. I did use the QR code on the bag to see if their website had more info on origin of the wheat berries, type of berry, protein percentage, etc. But this flour is not listed on their website so there was no info about this product. In the pics below, you can see that the gluten structure was almost impossible to develop. I ended up proofing in a bread pan as well was as a basket. There was suboptimal rise and spring in both. I will probably use this flour as an addition to some quick bread recipes but I won’t be baking natural levain bread with it again.
