Simple ingredients to make and quick to bake! I can get it started and continue to get ready for my day. We usually add walnuts to them but they're great plain too!
We have been using this product for awhile with great success. This time, my son had asked me to buy it. He was absolutely shocked that there was a recipe for blueberry pancakes on the box, and beyond excited to try out said recipe. I am excited to have found something that my tween boys find easy enough and delicious enough to make them for themselves.
Mix one box of the Jiffy Apple Cinnamon Muffin mix with two cups old fashioned oats, one of the little tubs of applesauce you pack in a lunch, two eggs, maybe a half cup of light brown sugar more less to taste and some cinnamon, Bake in a greased 8" cake pan in a preheated 350° oven for about 28 minutes. I also sprinkle more brown sugar and cinnamon on top, that makes a little crust. Excellent breakfast.
Just like Jiffy Honey Corn Muffins, it is reliable and consistent. It's not the greatest blueberry muffin, but it just works. Whether with tea or coffee in the morning, it's a good accompaniment. If you want a really good blueberry muffin, take the time and make it from scratch. But if you want convenience and ease, choose these. I make a box every week.
i love these little muffin mixes. my grandma gave me jiffy mixes when i was in college, decades ago. Please stock in store, they are so hard to find anymore. banana and raspberry are my favorites but apple cinnamon and blueberry are good too.

This muffin mix was easy to make; however, because of past experience, I added a few small frozen blueberries to give it more of a blueberry taste. I just had to add a couple more minutes of bake time -- they were delicious..
I'll start by saying I've been using JIFFY corn muffin mix most of my adult life (my Mom before that.) when I saw the Banana muffin mix, I was thrilled and bought the six pack from Walmart. I brought a box to my daughter's house and a box to my son's, I have one more son who is getting a box. The remaining two are mine! If you're counting, I baked a batch as soon as I got my order. I like to add a small ripe banana, some chopped walnuts to the mix, not necessary to a yummy muffin, just my good idea for me. Also, I use a muffin top pan, so i can freeze some…my freezer is not very big. Flatter size is better for me. The box makes 6 perfect muffins just add an egg %26 ⅓ cup of milk and you're ready to go. JIFFY is a staple in my pantry..
I love this simple breakfast bread and muffin mix. It's fine as is listed on the box, but I prefer to make mine taste like homemade. I add a single serve cup of no sugar added applesauce, 2/3 cup of ricotta cheese, 2 eggs, Splenda Brown sugar, cinnamon and vanilla. It bakes up beautifully in a pie pan at 375° for about 15-17 minutes. Texture is similar to a cake with pudding in it.
