I've been missing NYC pizza for years. Now King Arthur and a pizza stone is all you need.
I love this mix! It is perfect for homemade pizzas. Great for families that like different toppings because you can make everyone the pizza they love. Easy to make, although I did not hand knead the dough. I used a machine to mix and the knead the dough, so I don't know if it is difficult to hand mix and hand knead. You don't need a rolling pin. You can stretch by hand and press into shape on a counter or cutting board dusted with the dry flour. You can make any thickness you prefer. I cook the pizzas on a little lower heat, like 450 degrees because I put a lot of toppings on pizzas and I dont like a medium brown or darker crust bottom. I use a pan with holes lightly greased with olive oil and the crust is perfect. The mix is incredibly versatile, you can make calzones, empanadas, pocket style foods, mini pizza rolls, and pastries, the uses are endless. I have made homemade pizzas for years but always bought a raw prepared crust. This 00 pizza flour had great reviews so I decided to try it. I added extra yeast because Iike a yeasty flavored crust. My first attempt at homemade pizza dough was perfect. My and dog loved it too. I added salt and pepper and a splash of olive oil. I let my dough proof on the counter for a few hours then refrigerated it for a day.
We are renting a house that came with a pizza oven so we are having a great time using this flour to make some amazing and delicious pizzas. So simple too. I thought it would need so much kneeding, but it only takes a few minutes. Then let it grow overnight for pizza tomorrow.
Pizza crust is awesome with this dough. I make about eigth 14 inch pies from the three pound bag.
I use this to make French bread in my bread machine. I tried to make pizza, but it didn't turn out too well. I am sure that is user error and not anything to do with the flour! I love the stuff and I buy it frequently. One bag makes three, 1 lb. loaves in my machine. It's a little pricey, though.

My first impression regarding this flour was pure joy! Finally, I thought I can get that authentic taste from pizza at home. The problem began when I went back to the second bag to begin my dough. When measuring out the flour a saw a brown speck that I recognized as a bug. Of course I associated the bug with my pantry and quickly tossed it. I then opened another bag, mixed my dough and began shaping the pie after rising and saw another bug. I pinched it from the dough and g ch continued stretching my dough only to see a second bug. There's no way that came from my pantry as I'd just opened it. I'm tossing the bag and finding another flour company.
