the beautiful knife

The knife is very sharp, and it cuts the vegetables into very thin slices. The pattern on the blade looks especially beautiful, making cooking a more enjoyable experience. This is the first time I've used such a satisfying tool.

Wow!

Kramer 8 inch Damascus! Should I frame it or use it? :) what a beauty! Very sharp out of the box, from other reviews I saw that when looked after properly, sharpening once or twice a year would do. Got also MIYABI 5000 MCD 23 CM SHARPENING STEEL TUNGSTEN CARBID for routine maintenance. Kramer looks but also preforms excellent. The only comment it is bit heavier on the handle compared to wooden handle but that's not necessary a bad thing. Also I would like to mention an excellent service I have received from Zwilling customer service! This gives you full confidence in the product. Thank you Zwilling. Finally it is not a cheap item, but if you cook at home, like I do, it makes the chores less of a burden.

The best knife ever

(This review was collected as part of a promotion.) The absolute sharpest and best knife I've ever used. It's scalpel sharpness cuts through anything like butter and the balance of the knife is exceptional. Not only is the knife sharp, it's beautiful and it's edge retention is ridiculous.

Cutlery work of art

I have large hands and this knife is a perfect fit. The blade is razor sharp and effective. The finish on the knife makes it a visual work of art. My son now refers to it as "The Shark" in recognition of it's aggressive profile.

Uniquely Brilliant

If the cost isn't a burden for you, just buy it! Not only is this knife a beautiful piece of craftsmanship its shape and ergonomics are wonderful, though I do have larger hands (XL for most brands of gloves). Unsurprisingly it was razor sharp out of the box and feels great in the hand. The Damascus pattern makes me want to use it all the time and the balance is just ever so slightly towards the blade which, for how I often slice and chop with the tip down, is perfect. The handle is smooth and while not round, does allow for some twisting if you aren't using a pinch grip. I only know this from trying to twist it intentionally with soapy hands though. It has never been an issue while in use. The edge of the spine is rounded just enough to not blister or rub my index finger when pinching it for relatively long prep sessions (e.g. 1-2 hrs), though in professional use it likely would be a problem. I also really like how wide the blade is to protect my knuckles and make cutting all the way to the board easier. Also helps me cut straight, if you need curves use a paring or boning knife rather than this knife. I'm careful to protect the edges of knives but the edge retention seems good. Whatever alloys are used in the Damascus pattern are attractive and I think a little more ductile than traditional Japanese steels. To me this is a great thing, I generally prefer the more ductile German steel knives as for some reason I have had really terrible issues with how brittle Japanese steel knives are (blades snapping on me, edges chipping, etc.) and I am not cutting bones or anything unreasonable. And always only on wood cutting boards. I have not had any such issues with this knife and it has had the opportunity to get more abuse than the rest of my knives since I got it. Bottom line, buy this knife if you want a beautiful large chefs knife with a unique blade profile that will give you a reason to julienne everything jut because you want to use your knife!

Beautiful knife

This is a very impressive knife. Scalpel sharp and very well finished. The chevron Damascus is really beautiful. I believe it's fairly well balanced and is very comfortable in the hand. I can't speak to the durability yet, but I'm fairly confident it will be in my kitchen for the rest of my life.

Should have bought 1 40 years ago!

Beautiful knife in your hand and in use. Well balanced and nice weight. Great knife from day one. I bought this and its paring knife sibling and between the two I have almost no desire to use one of my old knives. I'm tempted to buy the full range even though I have been able to cover pretty much everything with just the two. Regular use of honing and strop and the edge lasted close to a year. It probably would have lasted longer, but I thought I'd use the zwilling knife sharpener on it. That was a mistake, but I'm confident with a whetstone and some time I can bring the blade back to like new condition.
