It's a great style pan to salute and fry things up. The low sides make flipping easy but also keeps steaming to a minimum so your food browns better. I will say that the preseasoning is on point with other reviewers so don't buy this thinking you can fry an egg or scramble eggs out of the packaging. You need to season it and then season it through regular cooking for awhile before you go and do that. I don't buy it for eggs. I bought it for fried potatoes bc no matter how nice your three ply stainless steel pans, potatoes will stick over and over again but I didn't have that issue with this. I'll co tiniest using it for sautéing and frying to get a really good layer of seasoning on it. I will say the pan is 12” from rim to rim, giving you about 10” of space at the bottom for your cooking needs. The handle is so long! I really appreciate that since I have a gas stove and plan to se it outside for the grill and other open flames. Also, this is a thicker carbon steel. It's more cast iron heavy than carbon steel light. I'm not picking this up to shake the pan while cooking like I do my carbon steel wok. I was expecting it to be lighter but it's not too terrible. I really love it. I'm very pleased with yet another lodge purchase.
As with most pre seasoned pans, there not non stick at first. After having cooked a handful of times it's properly seasoned.
Great for searing meat or pan frying. Nice flat bottom to the pan. The pan needs the same basic care as cast iron.
Once seasoned it cooks very well. luv it!!! kinda heavy tho.
Exactly as billed, big pan, easy to clean, doesn't stick if heated up and oiled properly before cooking
As a cast iron user for several years now I recently became interested in trying out a carbon steel pan and I'm glad I did, at about half the weight and most all the benefits of cast iron this has become one of my most used pans. Personally, I always strip Lodge's (weak) soybean pre-seasoning with oven cleaner and then pre-season with flax seed oil using the oven method 3 to 4 times. You really get it non-stick after cooking some fatty foods such as skin-on chicken thighs, pork chops etc. a few times then it's ready for eggs. The handle is long enough to keep it cool to the touch for a while but it's rather uncomfortable, that and the Lodge pre-seasoning are the reasons I give it 4 not 5 stars. I'll pick up a handle holder soon. Btw, I bought a machined smooth Vollrath 58920 11" carbon steel pan at the same time and I am still struggling to get it non-stick. It may be the user's fault and not the pan but I have tried the Vollrath (potato skin) pre-seasoning instructions, oven and stove top methods with no success. I'm stubborn, I WILL get that pan non-stick but will stay with Lodge in the future.

Fairly heavy thick steel for heavy duty cooking anywhere, cook top, to open camp fire. The only draw back I would say is there pre-seasoning, I believe it is sprayed on creating a texture inside the pan which I do not care for, So i re-seasoned the pan. Plus i now know what the seasoning is on the Pan now. Also this is a heavy gauge steel pan so it has a lot of weight to it. But compared to the others on the market it is a steal for the price. pun intended...
i love lodge cast iron ant thought I'd rally like their pre-seasoned carbon steed pan.. When I picked it up I disliked the rough feel of the handle. It weighed much more than i thought it would. I would find it very hard to .use with one hand. A helper handle might help along with a smooth handle. Sadly, I will be returning it. Never unwrapped he packaging.
