Sharp, comfortable knife
It's extremely sharp, dangerously so. The size is bigger than what I had before, but just small enough that I can manage it fairly well. A lot of other santoku knives on the market are bigger. It's comfortable and easy to handle. Due to its sharpness, I am using my vegetable peeler for peeling and not the knife. I'm glad I purchased it, but also know it was about $50 cheaper before all this draconian tariff nonsense. I just started a CSA and it helps make all the veggie prep easier and faster.

Best knife I've ever had.
The knife is impeccably made; very high quality, the edge is perfect (balanced and extremely sharp, with perfect double bevel). Cutting a potato was as if there was no potato under the knife, it glides to the bottom of the cut with negligible resistance. I hope I can sharpen it well for maintenance.
