salt dominates flavor
Compared to other dijons, Maille Dijon Originale mustard is way too salty. Its flavor does not have much heat from the mustard, either. I disagree with the folks over at America's Test Kitchen that Maille is the second-best dijon mustard; I would take Grey Poupon over Maille any day because Poupon has better flavor and, unlike Maille, doesn't kill you with salt overkill.
