If you have been looking around for a high grade, professional precision blade, then you just found it. After many years of using very good German and Japanese steel in the kitchen that was perfectly satisfactory, I have now found the tool that I was hoping those other knives could be. Effortless, paper thin slicing of both large and small material is a joy with this fine tool.

You can do some really big breakdown work with it and so super fine. Precise cuts. This is my new favorite knife. I've always been a fan of shun knives before this one.
