When beauty matches utility

Almost all kitchen tasks are easier with a razor sharp, high quality knife. This prep knife makes quick work of everything. It is comfortable, balanced, and keeps its edge very well. Besides that, it is a beautiful work of art in and of itself.

Incredible Knife

This prep knife is only one option in the incredible Miyabi Black series. It's hard to say which part is the highlight between the black ash wood handle or the MC66 core blade with 132 additional layers of steel creating a damascus pattern. This razor sharp knife provides you with the most delicate thin slices imaginable. A prep knife is one of the most reached for knives in a home kitchen because the cutting tasks do not always require the length and reach of a chef's knife.

A great prep knife

This is a beautiful Japanese prep knife. I love how sharp this blade is, it slices anything like it's butter. With the 133 layers of MC66 steel, you get an exceptionally sharp knife, while also having a durable blade thanks to it being ice hardened. These are some of the best Japanese knives on the market. The prep knife is a nice in between size, smaller in length, but still a wide blade to chop, slice through produce easily on a cutting board.

breathtaking

Truly a work of art. The blade is wrapped in 132 layers of steel creating a beautiful damascus flower pattern. The blade is super sharp, durable and well balanced. Every detail is considered. Love the feel of the D shaped handle. I use this blade for slicing longer vegetables such as eggplant and zucchini. If you want to slice an onion without crying...pick this !!

132 layers of sheer beauty and sharpness! This Miyabi Black prep knife is a work of art and function! Miyabi never disappoints and will always handle the task ahead. A prep knife is good for so much - it will become your go-to knife. The Damascus flower pattern is stunning with a rich, black ash handle, is a knife of contradictions in its beauty. This is a real keeper.

I can't believe that you can actually use something every day that looks this beautiful. What an absolute piece of art! The blade is gorgeous with 133 layers and an edge that can cut the thinnest slices imaginable yet feels light in the hand and has a perfect balance. The Black Ash handle is not only stunning but feels great in both a right handed as well as a left handed cook. The shape and size of this knife makes it a great addition to your knife collection. The prep knife can take on all those small projects such as mincing garlic, herbs and shallots. It also works great on small citrus and apples. Has a nice amount of knuckle clearance for maximum cutting performance. enjoy!

Great precision

[This review was collected as part of a promotion.] A great Japanese knife is paramount for anyone, no matter their situation. When you need to rough chop something, any German steel or even German, Japanese hybrid will likely do. But this won't work for you when you need to finely cut or chop a charcuterie tray, or something similar that doesn't get cooked down and presentation is key. A regular knife or even a high end German knife will work against you in this scenario. This is where an extremely light and extremely sharp knife like this one comes in. It is much easier to hold, and much easier to cut with this knife, so you can get done quicker and give a better presentation. I own a Shun 7" santoku and I like it, but it's not as sharp as this and I haven't found anything sharper. The balance is superb, there's minimal fatigue holding this knife and it's comfortable in my hand. Being as light as this is I should warn you to be mindful of what you're cutting. This isn't meant to be a versatile knife by any means. Always keep another workhorse knife nearby and don't be afraid to change them out when you need to tackle heavier stuff like large portions of meat. Especially when cooked.

Stunning Beauty / Petite Knife

The steel is gorgeous, and the blade dimensions make it uniquely versatile. I found the circumstance of the grip to be far too narrow and round in my hand to control with the exacting precision a knife of this quality demands. I returned it.
