This is an amazing little knife, easy to maneuver and extremely sharp. It came in a very nice box and slices through everything with ease.
After buying my 6" Miyabi chef's knife I knew that I needed another smaller knife. My 3.5" Miyabi let's me breeze through all my prep work. These 2 knives are the sharpest ones that I have ever owned.
The handle has a nice weight and shape to it!! The blade also has a really nice shape for precision.
Sharp, comfortable, well made. Good addition to my other 4 Miyabi knives. Definitely worth my money.
Absolutely love my Miyabi Evolution paring knife! The handle is very comfortable, knife is sharp and doesn't dull, and is amazing for peeling apple skins and mincing garlic!

One of my most used knives in the kitchen! I always have this knife close at hand when I am working in the kitchen. I bake so I am constantly peeling fruits mostly, but some vegetables as well. It is perfect for peeling the fruits and it is super sharp so often I can get that peel off in one long piece! The three-rivet handle is very comfortable in my hand and make the small work easy!
I LOVE Miyabi knives but hate this Evolution collection. I have Miyabi Birchwood, Artisan, Kai, Mizu, and Moromoto and Evolution were the only ones where the info is not etched but seems to be a print that rinses off along with the edge. These look very much like the Morimoto ones but far worse quality. I already don't like the western grip but that's a me-problem that I won't hold against the knife, but I got fusion knives fewer than 6 months ago and they are used maybe once every 2 weeks because I don't like their grip. They are only ever hand washed, never soaked, never dishwasher (don't have one) and the letters and logo are GONE while my other Miyabi knives I have used every day, multiple times a day for nearly a decade washed thousands of times have fresh perfect info and logo. In addition to Evolution's info being made of disappearing ink, they will not hold an edge. Every other Miyabi collection gets five stars but this one is awful. I have photos of my daily used ride or die work horse Miyabis next to this Evolution used fewer than 20 times and all of the lettering is gone and it acts like it was recently used to cut a slab of concrete not delicately mKing roses out of strawberries. I have never had such a bad experience with any Miyabi - It is the worst of my 12 Miyabi knives and it's not even close. Comparing Explution to the others is like comparing a popsicle stick to a katana. Ot resembles the Morimoto knives which were my previously my least favourite but at least reliable - these fusion ones are so terrible that I can't believe they are even Miyabi at all. Awful. Buy ANY Miyabi knives but these.
