Have had this knife for a month now. Is very comfortable to hold and easy to use. It just glides thru vegetables. Very slight pressure and a very clean cut.
I have just added this knife to my collection of Morimoto Edition knives and couldn't be happier with it. I now have a 3.5" paring, 7" rocking santoku, and 9.5" chef's knife. This was the missing knife in my collection of Miyabi knives and I love it. It makes deboning chicken a breeze. And is small enough but versatile enough that my wife will appreciate. The chef's and santoku was too large for her to handle and the paring knife was too small to tackle the everyday job. I HIGHLY recommend this knife for your everyday needs!!!

Not our first Miyabi. It is hard to spend a lot of money on cutlery but every now and then the right ones come along. We have purchased sets of other well know companies and understand the Miyabi is part of a major brand but we like the details and sharpness of this series. I love the attention to detail on this lovely prep knife. From the smooth transition between blade and handle to the interesting logo on the blade As a perfect shape knife for chopping small amounts of veggies to slicing and dicing onions, it will get plenty of use in my kitchen. Meant to last a lifetime, the cutting edge certainly stays sharp and smooth unlike other Japanese brands that seem to nick a lot.
This is a great Japanese prep knife. I really like the feel of the handle on this blade, it's very comfortable and contours nicely. This blade has a nice lighter weight to it, but is very sharp. This is a great intro prep knife if you want to go from Western style knives to Asian, with the Evolution, it brings the two styles together, making it a much more durable Japanese prep knife.
[This review was collected as part of a promotion.] This knife is amazing, I'm a hobbyist chef and my wife bought me this for Valentine's Day. So far it has held an edge, and made prep work a breeze! Per the norm, zwillling did not disappoint with this knife.
[This review was collected as part of a promotion.] I work at a high-volume cocktail bar/ music venue and use this 3-4 times a week for garnish prep. Sometimes I will opt for a smaller Wüsthof paring knife depending on workload, but the Evolution has a tendency to produce better garnish and keep its edge longer. Maybe I just baby this one a bit more, although I've previously had to replace Wüsthofs and have yet to do the same with a Miyabi blade.
Beautiful thin Japanese blade meets Western handle for a effortless cutting experience. The patented ice hardening process leaves this blade exceptionally hard yet chip and crack resistant. Because the blade is forged from FC61 steel it is able to retain its razor sharp edge longer. I love this prep knife because it is smaller than a traditional Chef's knife but sturdy and sharp enough to tackle all the same jobs.
The Miyabi Prep knife is perfect for those in between jobs where you don't need a chef's knife, but a paring knife won't do. Slices, chops, minces and dices just as well as my eight inch chef's knife, but much smaller and easier on the hand. The Evolution is made in Seki Japan but has a German style handle which makes it more comfortable in my hand. The knife is very sharp, and does not need to be sharpened as much as some of the other knives I own. Don't know what I would do without this knife. I use it for just about everything!
