Miyabi Kaizen 7-inch Hollow Edge Rocking Santoku Knife

The blade is very sharp. The knife is lightweight for its size, well-balanced, and easy to maneuver. The blade material is a Damascus blade, and is just a beauty to look at. I really enjoy working with this knife, whether it be vegetable chopping or meat.

This is the sharpest knife I have ever owned and I don't have cheap knives. The high hardness, Rc61 will help it stay that way. Good balance, and very attractive so it became an instant favorite for both my wife and I.

I love my knife! This knife is strong and durable and gets the job done. I think the Damascus finish is beautiful and the handle feels luxurious. I hardly have to sharpen it and it stays sharp and able to cut just about anything. My husband makes a really good ribeye and I use this knife to slice the pieces up for our meal preps. It always cuts like butter I can't wait to buy more of these!
