Fantastic, beautiful knife. Impressive directly out of the box. Outstanding balance, razor sharp edge. It's a bit smaller in form factor and fits in perfect with my other knives. But I'll probably end up using this knife more than all of my others. Very convenient size. 10/10 perfect

[This review was collected as part of a promotion.] We have the small 3.5in paring knife and the 6in chef's knife. Both work well, but one is too small for most vegetables, and the other is too big for my wife's smaller hand. The 5.5in prep knife is just right for her. The shorter blade makes it easier to hold and the lower profile of the blade makes it easier to slice through vegetables than the 6in chef's knife. I would definitely recommend this knife
This prep knife is great for slicing meats and vegetables, It is smaller than a traditional chef's knife but performs just as well for small tasks. The updated Kaizen II has an FC61 core that is stronger and more durable than the original. It will retain its razor sharp edge longer and feel more sturdy in your hand. The handle also has been upgraded to pakkawood and is slightly larger for a comfortable grip.
[This review was collected as part of a promotion.] Knife in the package looks like a Hi-Tech gadget. Taken out of the package it also looks impressive, like a Damascus steel. It is sharp and very convenient to hold. Its handle is durable and I hope that this knife will serve me for many years.
I love using Miyabi knives in my kitchen and this one of my favorites. I use this for smaller cuts of meats, fruits, and veggies. The FC61 core makes it so the knife is durable, yet razor sharp. The sharpness is very evident when cutting and the Damascus pattern on the blade is true to the beauty of Japanese cutlery.
I have used this knife for a few years now and have come to rely heavily on the prep knife. It is a good inbetween knife for the chef and the santoku, as it is a little smaller so can handle all your smaller meats, poultry and vegetables. The traditional D-shape handle fits snuggly and comfortably in the hand so you have good control and comfort.
