Really like the balance of the knife, and the shape and feel of the handle in my hand. Obviously the knife cuts great, and it's the perfect size chef's knife for someone like me, who feels like an 8-inch or larger chef's knife is a little too big for routine, at-home kitchen prep.
Beautifully balanced, incredibly sharp. I tested many knives from many other brands: Shun, Wusthof, etc.. and this was easily the most comfortable and balanced. FC61 has held up well in my other Miyabi knives and I have no doubt this one will too.
I got this knife as a graduation gift and I absolutely adore it. It is incredibly sharp and cuts precisely, allowing for a supreme cooking experience.
I love the kaizen line i own 2 of them now and hoping to add more in the future.

What a beautiful knife! I am not a professional, but I love high-quality products. My wife on the other hand is a degreed professional and knows what she's doing in the kitchen. This knife was a gift for her. When she first saw it, she flipped out, having always wanted a Miyabi. She quickly demonstrated its quality by slicing into some bread on the counter. With no serrated edges, the knife glided through the bread leaving a perfect slice. Absolutely amazing the difference between an average knife and a Miyabi. Worth every penny and more.

For an everyday knife I have been using a 5.5 inch santoku knife. This knife is definitely different! Being a more classic chef knife, I have to get used to a different motion. I also hold it different than my santoku. For my petite hands, it does feel a tiny big large/heavy, but I think it's something I'll get used to. It is SO sharp. It is well made and it looks great. I think this knife will get used a lot!
