I enjoy cooking all types and a large skillet is an essential tool. I also have the 10-inch skillet that I probably use more often when I cook for myself. These skillets are the best ones I have found in years in terms of weight, balance, even heating, easy to clean and store EXCEPT except for what I consider a fatal flaw: the cooking surface is not flat from edge to edge. For instance, when I try to cook a crepe, I cannot use the 10-inch pan because instead of a crepe, the thin batter forms a ring around the perimeter of the pan. Furthermore, the 12-inch pan is also undesirable because the batter tends to deform into an egg shape more often a round circle. I use the pans for stir-fry and to and other purposes but choose another when I need a flat surface (that acts flat). These are great pans if you are not particular about the flatness. — If OXO fixed this flaw; I'd consider it #1 at twice the price.
