Delicious and such a great alternative. I can make these for family gatherings and everyone loves them even of they are not gluten intolerant. Our girls can enjoy these right with everyone else. A staple in our home. Aluminum free baking powder, many organic ingredients. Non GMO, certified gluten free!
We absolutely love the Pamela‘s cornbread and muffin mix because it is one of the few cornbread mixes I have found that can be made unsweet. Any of the gluten-free mixes do not have that option and sometimes we like sweet and sometimes we do not so it works perfect for us.
Eating gluten free is much easier using Pamela's products. I use coconut oil instead of butter and add whole corn to the mix for really yummy results. No one can tell they're gluten free because they're soooo good. The corn in this cornbread mix is organic, so it's a winner in my opinion.
Pamela's makes THE BEST gluten free cornbread I've had since before I was diagnosed with celiac disease 5 years ago. It's expensive but I'll keep buying it because I'm a southern cornbread lover. I don't put sugar in my cornbread and I like it to have some texture to it. So when I was forced to go gluten free, I was really upset with my options. Every other brand was ground so fine, it was almost like powdered sugar. Plus, all but one other brand was so sweet I remember looking at the ingredients and seeing sugar listed as the FIRST ingredient and then looking at cake mix to see what the first ingredient was... and no, it wasn't sugar. This is crazy to me. I don't mind sweet cornbread every once in awhile (like jiffy sweet) but who wants their cornbread to be sweeter than cake or donuts? Not me. So anyway, I just thought I'd leave this review for anyone who's searching for good old fashioned, gluten free, country cornbread. That's what Pamela's will give you. I love it and will stock up on it from now on. If you like it sweet, just add sugar.
Pamela's cornbread mix is a real hit with me. It's always difficult to find tasty gluten free products, but this mix is a real winner. My favorite way to use this is in making the muffins, with craisins and orange zest and juice. I freeze them, and pop them in the microwave on defrost.
My whole family loves my vegan version with this cornbread mix better than any other cornbread. I substitute flaxseed for eggs, vegan butter, almond milk and add ~1Tbsp apple cider vinegar, 1 can organic corn (drained) and 1 can hatch chiles. Bake in preheated cast iron pan and it is awesome!! I keep a stock of the mix, canned corn and chiles to always have on hand. Super easy and good.
I just purchased SIX packages of Pamela's Cornbread Mix as we LOVE it. It has great flavor, but even better, it is nice and moist. I've tried for years to make my own moist cornbread and it always seems to be dry and crumbly. NOT Pamela's!! I can't even tell you how many packages I've purchased in the past, and still find myself running out so 6 at a time it is!
I have enjoyed your cornbread mix for many years. Recently I was unable to find it on any of the store shelves where I regularly shop. So I was forced to order on line. It was a pleasant experience and I did not waste any gasoline. Thank you!
I buy this mix because I am allergic to enriched flour and Pamela's does not use enriched flours. It's kind of expensive but most things I can eat are.
I made this tonight for my family. We were not impressed at all. Very crumbly, dry that you tasted dry corn meal in it. I'll stick with another brand I purchased, which is crumbly too, but it doesn't turn out dry and tasteless. (However, the best style of cooked cornmeal is still fresh homemade polenta. Add some butter and cheese and eat it hot. Mmmmmm !! Nothing beats that, ever !) So, it's a No from us - 4 people.
