more molasses, less sugar
I had never tried blackstrap mplasses before. I had heard about it, but had never seen it. it is definitely not as sweet, but is supposed to have higher nutritional density which makes sense. Blackstrap has gone through an additional concentration step removing more sugar, leaving more minerals behind. the flavor is stronger and a bit bitter, but that adds to the flavor. My motherin law used this to make her chow mein which kept it from getting too sweet.
