Great Knife Sharpener

The Classic VG2 knife sharpener is well designed and seems as though it will last a long time. The scissor-action is an ingenious way of keeping the cut angle properly aligned and even on both sides. One factor you need to pay attention to is make sure the knife is centered in the slot as much as possible when drawing it through the cutters, or the angles will not be fully symmetrical. It takes a little usage to get the feel of the sharpener and how much pressure to push down on the scissor action while drawing the knife through it depending on the angle of the cutting edge of the knife. I have a Santoku knife that needs an 11° edge and a light pressure, a chef's knife that needs a 15° edge and medium pressure, and others that need closer to a 20° edge and a heavy pressure. The ability to sharpen serrated knives, and be able to hone and polish the edges without removing any metal is a plus. The polishing procedure may be a bit tough for those with weak or arthritic fingers, but isn't completely required to get a sharp edge. I have small to large kitchen knives along with smaller pocket knives, and the Brod %26 Taylor VG2 sharpens them all. I keep my sharpener next to the knife block for a quick hone before using any knives. I recommend this sharpening tool.

The day I received it, I sharpened all my kitchen knives in just a few minutes and everything is now very sharp, As recommended by BT videos, I will do a quick honing pass before each use. This is the first sharpener I've used this quick and good.

The only one that works

I've owned every "knife sharpener available. Besides paying a professional to expertly sharpen them, this device is the only thing I've ever owned that does the job properly. This should be a fixture in every restaurant. Well done.

Buy Something Else

Not really happy with item. As another reviewer noted, it doesn't seem to sharpen. My knife steel works so much better. I would recommend buying another type of sharpener.

it doesn't perform very well. If you have an extremely dull knife and you use it for 15 minutes, you might get it to acceptable, but it's never going to be a sharp knife at least not the kind of sharp I'm used to.
