I love the blade with the 16 degree cutting angle. This creates a blade that just glides through some vegetables such as a bell pepper. This edge makes prep so much easier.
It is a wonderful tool one that I didn't know I really needed. feels great in my hand very maneuverable chops like a dream.
The Shun Nakiri is an amazing knife. I now look forward to a chopping need. All Shun knives are truly the very finest!

Sharpness for lifetime & easy to sharpen. Not too heavy or light for women. simple desighn.
The weight, the width, the length, the little bit of rock, the d-shape, the steel . . . everything came together for me when I stumbled upon this little gem. I had been researching nakiris for months trying to find the right one that would be somewhat stainless, but easy to sharpen, without breaking the bank. I knew of Shun and the quality, but had been too deep in researching the smaller Japanese knife makers. Well, there sure are a lot of great knives out there and it was difficult to decide until I found this one on sale. As soon as I unboxed it, I knew that this was going to be passed down to my children. I will take excellent care of this work of art. It cuts like a dream, shines with a gleam, and fulfills a dream: sheet cutting cucumbers for sushi. Ha, that and so much more! Plus, the model number is my birthday.
This was my entry into Japanese knives. I gave it to my son in law who fell in love with it. I currently own a high carbon Nakiri from Japan. It cuts better and has better ergos. It's care is much more demanding, but I'm fine with that. if Robbie hadn't lusted for this, I would still have it. It is a very good knife.
