I prefer dark chocolate to milk chocolate; dark chocolate can be somewhat bitter, which is to be expected, but I've noticed some brands are actually sour, which I find unpleasant. This chocolate is "Dutch processed", so there is no acidic taste; it reminds me of hot chocolate mix. It is quite decent quality for the price, and it performs well for dipping. In the past I have used chocolate chips, but a side-by-side comparison showed that these wafers set up better than chips: shiny, no splotches, and a little less messy to handle. Chips came out matte, splotchy, and melted/smeared instantly when touched. I have some brownie, pudding, and frosting recipes that call for 4-8ounces of melted chopped chocolate or chocolate chips; in the future I may use these melts both for flavor and price. Attached pic shows pretzels dipped in melted choc chips (splotchy) and Wilton Candy Melts (shiny and even).
I wasn't expecting these candy melts to actually taste like dark chocolate - I assumed that they would have a pretty standard chocolate coating flavor. They do actually have a lot of rich cocoa flavor, although they are a little too sweet for me. The texture is great for adding a chocolate drizzle or coating. Melting was easy, and I didn't have any trouble with scalding, which sometimes happens when I just use chocolate chips and oil. I also tried using them as ice cream mix ins. They worked a lot better than standard chocolate chips - they froze a manageable texture instead of getting hard, and they added a great flavor. I received this product in exchange for my unbiased review.
