Don’t make the mistake that I made
In the past, I ordered Freeze Dried Corn, which we really enjoyed. We just ran out of the Freeze Dried Corn, so I ordered some more…oops! I ordered the wrong thing. I ordered just plain Dried Corn, NOT the Freeze Dried Corn. BIG difference. The Freeze Dried Corn is light, airy, sweet, and you can eat it right out of the bag. (We really enjoy it sprinkled on top of a chopped salad.) The Dried Corn is hard like dried beans. And, like dried beans, you need to soak the Dried Corn for a few hours, and then boil or pressure cook it until tender. I ended up grinding some of the Dried Corn to make corn flour. I have also been trying out recipes on the internet that call for Dried Corn. We will manage to use up the Dried Corn, but I doubt that I will order it again.

The yellow corn was great. Made some corn bread after milling and made some nixtamal nada for tortillas and tamales. Wish you could grow and/or market more varieties of organic Mexican heirloom corn both white and yellow. Thanks again for the quick delivery.

Sunning quality corn! I grind it manually ( I have a stone manual grinder). I made polenta, a kind of polenta I did not eat since about 20 yrs ago in Eastern Europe. I am reordering now.
