Great Pancakes!
We've tried many varieties of gluten free pancakes and King Aurthur are by far the best. The kids love them and now prefer them over standard flour pancakes.

KAF GF Pancake Mix
I've used this gluten free pancake mix since it was introduced 3 yrs ago and we just love it as well as the entire family. I add to the mix when making half the recipe: 1-1/2 T Vanilla (seems like a lot but makes them taste great) 1 t Almond Extract 1-1/2 T Cinnamon For the oil I use Butter, for the liquid I use Buttermilk. I bake/fry them in my electric skillet (its a big GE one I've had a long time) at 350 deg using COCONUT OIL which gives each pancake a crispy edge (using probably 3-4 T coconut oil). Like to use the electric skillet because then I can control the temperature and the pan is not either too hot or too cold. The pancakes will absorb almost all the coconut oil on frying/baking and, of course, coconut oil is really good for you in a whole lot of ways. I portion each pancake out using a 1/4 C soup ladle. I make them every Sunday for our special breakfast. Have made them using frozen blueberries and they're great that way as well.

Gluten free and tastes GREAT
I have been using this brand for 4 years. They know how to make gluten free food taste good. I like to make my own mixes, but there are times when a mix is just so nice to have. I love mixing in raspberries in the mix and having super yummy pancakes. I make the entire box and then freeze the pancakes that aren't used and reheat in the microwave. That make breakfast for 5 kids super easy.

Amazingly delicious!
I tried a few different pancake mixes and tried making them from scratch once (I'll perfect that later) prior to buying one box of King Arthur. Now I'm back at the store buying four boxes. This is sooo good! My kids loved it too, but I'm not sure I'm ready to share just yet. I plan to experiment with different receipes and different brand fours to perfect a batch from scratch (preferred). But until then this is my go too box of premade pancake mix! Sooooo in love.
