King Arthur Baking Company Non-GMO Project Verified, Certified Gluten-Free Measure for Measure Flour, 3 lb Bag

I've had to stop using regular flour, and have wasted so much money trying alternative flours that didn't "measure up", that I was reluctant to invest in this one - however, it was recommended by America's Test Kitchen when I was watching it one day, so I took a chance - and couldn't be happier!! It actually works BETTER than reg. flour for baking - it kept the fruit distributed well in breakfast bread %26 muffins, instead of sinking to the bottom - so I will continue to buy it for those recipes. However, I do wish it had more "lift" as the breads do not rise as high as I'm used to - but I also didn't have digestive pain so I'll just have to live with that! 😉

I was surprised but my biscotti came out great!!! I will use again! I wish it cost a little less though!

This is one of the best gf flours that I have used. The recipes come out perfectly and King Arthur has lots of good recipes on their website.

Quality product always performs well in my GF baking. Trust this flour to create wonderful baked goods every time.

THIS IS MAGICAL GF FLOUR!!! I was diagnosed with Celiac Disease 8 months ago and I've been experimenting with gluten free baking since then. I just made my favorite banana nut muffins tonight and simply swapped the AP flour with this- they are exactly like the gluten version!! I am amazed! Best gluten free flour I've tried!!!

King Arthur 1:1 flour is our favorite brand to use. Our son has celiac disease and this makes it so much easier in the kitchen to make his favorite treats. I use it for cake baking, cookie baking and even bread baking. The ease of use that comes with finding recipes is phenomenal also.

I started using this years ago when cooking for my Mamacita ( I moved back home to be near my elderly Mom and she is gluten intolerant). I have cooked dozens of desserts using this flour and resultants recipes are the same using this flour vs using gluten containing flour. I recommend 100%, pricy but worth-it!

This is the best GF flour you will use. I bake alot and my family is gluten free. We have people over often and bake for others and even then, people compliment the baking. It works the best out of all the gluten free flours we've bought and also the homemade versions of gluten free flour. I marked less stars for the price because all the gluten free products are rediculously expensive. Gluten free baking will always be more difficult than regular gluten baking, but this one really is the best!

America's Test Kitchen highly recommends this one but says to let it (and any GF flour blend) to rest for 30 minutes (but no longer) if the recipe calls for a short bake time. The starches need this time to hydrate to avoid that notorious GF grittiness. I made their chocolate chip cookie recipe with this flour and actually preferred it to ATK's own custom blend because I like my cookies to have that bit of spread. My non-gluten free kids loved these chocolate chip cookies! I will definitely stop making their favorite wheat based Mrs. Field's chocolate chip cookie recipe as the gluten clearly does not have any advantages. I just wish King Arthur would take advantage of ATK's published research and write the 30 minute rule into their own recipes - and give Gluten Free a proud name.

I have only made Fococcia Bread using King Arthur's recipe. It was split with the ladies at the church. Half loved it and half thought it was a little heavy (dense). I was one who thought it would be better a little lighter and chewier. But it tasted good. No after taste. I will make other things with it.
