Bob's Red Mill, Organic Spelt Flour, 20 oz

First time to use this brand. Prior to this order I obtained spelt flour from a local business in my area. They went out of business and I couldn't find spelt online for a price I was wiling to pay. I discovered Walmart carries spelt flour while shopping online so I ordered some. I'm very happy with my purchase and very pleased with the quality of this spelt. I used the spelt flour for making pancakes. It mixed well (slightly lumpy as it should be after light mixing) and it cooked well. I will definitely be buying this product again as long as the price remains reasonable. Note for those new to spelt flour: you should not over mix/stir spelt flour. Some lumps are to be expected (much like the lumps formed in most muffin mixes) and they do not affect the texture or taste of your dish. Over-mixing spelt flour can significantly impact the texture and structure of baked goods due to its delicate gluten network. Unlike conventional wheat flour, spelt has a higher proportion of gliadin to glutenin, making its gluten strands less resilient. When over-mixed, the gluten breaks down quickly, leading to crumbly, dense, or flat baked goods instead of the desired airy, elastic texture. So don't over mix. Enjoy!

I added this product to my multi grain bread. It was fantastic and stayed fresh for some time.

I love this flour! I only eat organic foods and wanted to make my own bread. I'm still learning about bread making, as I've been avoiding gluten for 20 years. But, Bob's Red Mill makes it possible to enjoy bread once in a while. The rich flavor of this ancient grain has been my favorite for a long time. I chose to make small loaves, so I could freeze what I wasn't going to use right away.

Several months ago, I read an article that spelt bread was easier to digest then other wheat flours. I found a simple 5 ingredient recipe that I made in my bread machine on dough setting. I transfer the dough to a loaf pan and bake in the oven. I do feel much better on the spelt bread.

I was excited to receive my 25-pound bag of Bob's organic, non-GMO whole grain spelt flour. It's too heavy for me to handle alone, but with help and a funnel made out of parchment paper, I filled a smaller container. I wish that I had a large glass container with a wide mouth to make the transition easier. I immediately made bread. I used an old family recipe which also contains Bob's organic, non-GMO cornmeal and unsulphured molasses. It was tasty, hearty and healthy. Thanks, Bob.

I use spelt as one of the 3 grains in a pancake mix I enjoy. (The other 2 are cornmeal and oatmeal.) Spelt adds a wonderful flavor to the pancakes, and this batch from Bob's Red Mill seems to have more flavor than I remember from other sources of spelt. Thank you for carrying it!
