Thai Kitchen Evaporated Coconut Milk, 13.66 fl oz Can

I recently made a batch of pumpkin soup using the Thai Kitchen Lite Coconut Milk in place of the evaporated milk I would normally use. I was not sure what to expect because I had never used, or tasted, coconut milk before. The Thai Kitchen Lite Coconut Milk made my soup extra creamy and delicious! There was no obvious coconut flavor and I was so pleased with the consistency and flavor that I plan on using the Thai Kitchen coconut milk in my pumpkin soup from here on out. This coconut milk blended into my recipe so easily and created a smooth sauce for my pumpkin orzo. I'm looking forward to trying the rest of the can in my overnight oats, especially since it's not too thick and doesn't seem to separate or require much shaking. I decided to try this coconut milk a little differently. I made light coconut ice cream and it was fantastic! It had enough flavor, wasn't heavy, and the low sugar content can't be beat! I will definitely purchase this product and try it in my curry next time.
