We have tried it in baking, beverages, and desserts with excellent results! I love that it is gluten free and does not contain and artificial colors or ingredients. Today I'll be reviewing Thai Kitchen Gluten free Lite Coconut Milk. I received this product free in exchange for my review. In the past I have used coconut milk in many different recipes from main dishes to desserts. The Thai Kitchen gluten free lite coconut milk is big on flavor but lower in calories compared to the Thai Kitchen original. I made Thai chicken with this product and I feel it's very comparable in taste and that's great for those watching calories and/or gluten, as you don't have to sacrifice flavor and this product checks all the boxes! I will definitely be purchasing this product in the future and have already recommended it to a few friends and family members!

I added it to my rice while cooking, and it gave it such a delicious, creamy texture with just the right amount of coconut flavor. It was an easy way to make plain rice taste a little more special without being overpowering. I love that it's the lite version too. I'll definitely be using this again and would love to try it in curries and other recipes!

This is my go to brand of coconut milk (among other great products too!) always reliably consistent for cooking and very tasty. As someone with celiac, always appreciate the clear labeling of the product being gluten free in addition to the great taste!

Thai kitchen gluten free lite coconut milk is so lite and creamy and tastes great. I made a Thai coconut milk shrimp and pasta meal. It was so delicious, the Thai coconut milk brought all the ingredients together for a fresh, delicate flavor. It was sure a hit in my home!

We loved the Thai Kitchen Gluten Free Lite Cocunut Milk! It was delicious in a pink drink we made that tasted just like Starbucks! If you mix it with some ice, strawberry- cranberry juice and strawberries it tastes just like it! Try it and you will love it too.

I was pleasantly surprised by how much flavor it had despite being a "lite" and gluten-free option. It added a creamy, rich coconut flavor to the dessert without overpowering the other ingredients. The dessert was flavorful, satisfying, and had just the right amount of coconut taste. I would definitely use Thai Kitchen Lite Coconut Milk again for desserts and other recipes!

My plan was to use this coconut milk in a Thai curry dish, but I ended up using it to make cocktails. Oops. We had a girls weekend and made pina colada's with this lite coconut milk, frozen pineapples, and rum. Obviously this wasn't healthy, but it was lighter than original coconut milk which is much thicker. This was needed since we were spending time in the pool and went out later that night. We didn't want to feel weighed down by heavy drinks. We felt like skinny queens. This lite coconut milk has a similar consistency of regular dairy milk, but with a strong coconut flavor. No added sugar makes it veristale enough for savory dishes, sweet desserts, or cocktails:) I will purchase again!

I received this can of Lite Coconut Milk free from Thai Kitchen so I could review it. I'm not a huge fan of coconut, but thought we'd give it a try. We added this slightly sweet milk to a combination of chicken, onion, paprika, garam masala, and other spices, and served it over rice. My husband and I were both VERY impressed with the creaminess it gave to the overall dish, and will be trying it again!

I used this as a substitute for my regular coconut milk in a rice and beans recipe. My family didn't notice the difference; It was a great substitutes for the full fat version.
