Wilton Meringue Powder is convenient, easy to use, and the taste is good. It is perfect for making royal icing. Note: The product manufacture date is displayed on the container lid as a "LOT%23" based on the Julian calendar. Per the Wilton website, their Meringue powder is good for up to 2 years from the date of manufacture. The first 2 digits in the LOT%23 represents the last 2 digits of the year. The next 3 numbers are the day of the Julian year out of 365 days. The last 3 numbers are the place of manufacture. Example: LOT%23 25091152. 25=year 2025. 091=day 091 out of 365. 152=place of manufacture. Based on the 2025 Julian calendar, this meringue was manufactured on 04/01/2025. I keep a printout of the most recent 3 Julian calendar years in my cookbook for easy reference.

I use this product to make royal icing for my cookie business. I buy it regularly and the quality is always consistent. The only difficult thing, is the price point. This specific product has increased in price by about $10 over the last 6 years, and it's something that I don't have a choice in purchasing. It's a key ingredient in my icing.

The secret to perfect cookie icing

I have used this meringue powder for my holiday cookies and it works great. It is basically a dried egg white substitute that you mix with water and powdered sugar to make royal icing.The best thing about it is how easy it is to use. You do not have to worry about using raw eggs, which makes it much safer for gifting treats to friends and family. It helps the icing dry perfectly smooth and hard, so you can stack your cookies without ruining the decorations.The powder smells a little bit like chemicals when you first open the container, but do not let that worry you. Once it is mixed into the icing and dries on the cookie, it just tastes like sweet vanilla. It also stays fresh in the pantry for a long time, so you can keep it on hand for your next baking project.If you want your cookies to look professional and have decorations that actually stay in place, this is a must-have for your kitchen.

Great taste, easy to use, just doesn’t smell great

I’ve made royal icing plenty of times using egg whites, but I needed to switch to meringue powder for selling my cookies. Wilton was easy to get a hold of and so far I really like it. The end product tastes great, the only negative is the actual powder %26 while you’re making the icing is that it smells pretty unpleasant. I’ve heard that most meringue powders don’t smell very good though, and like I said it tastes great when it dries so I’m not too bothered by that fact. Here’s the two sets of cookies I’ve made with it so far. I use Wilton and sunny side up food coloring, and it takes the color very well.

I have been using this product for years. Works the best for custom sugar cookies. Pleasant taste and dries nicely. Just getting harder and harder to find.

This is a good oroduct in my opinion. Use it a lot during the holiday season for royal icing. A bit pricey, as are all similar products. Quality is good.

I use this for my Royal Icing (rather than risk raw eggs). It works perfectly, and is easy to use. If you store it in a cool, dark place away from light, it can last 2 years.

Easy to use. Not as tasty as butter cream frosting, so I added a little vanilla and almond extract. Worked well and cookies looked quite professional.

I decorate a lot of sugar cookies w royal icing. I come from the side of using pasteurized egg whites, but they can be hard to find and make. I tried this product on my 3 last orders, and I did have problems with the volume/expansion of the icing during the mixing. I also had inconsistent outcomes on my flooding and line bags. In a pinch I wouldn't hesitate to use it again, it dries fast and it tastes good.

Both containers were cracked and we got icing all over us when we opened the bag. Delivery person said we had a gated drive which we don’t. He left a paper bag down by the main road in the rain.
