I love millet and eat it daily. I cannot tolerate wheat, and rice has some level of arsenic, so we limit that to once a week, at most. Millet has a nice, almost-cornlike flavor. No bitterness whatsoever. Depending on the amount of water used and length of cooking, you can get a texture anywhere between rice and oatmeal. You can toast it in the pan first, but that is not necessary. The proso variety (which this is) is the safest, with the least anti-nutrients, so you can absorb the minerals.

millers smell very wiered . when we ordered 1 lb from same brand it came very good. this time they taste like Play-Doh very bad smell as well after cooking. 20 lm millers are spoilt
