I use this in baking all the time as I have a daughter who is a very picky vegetarian and doesn't get a lot of protein without some creativity! I typically swap out one cup of the regular flour and use one cup of this flour in its place when I bake bread or cookies. The batter has a slightly bitter taste when raw, but baked is delightful and the texture of the finished baked items is perfect. Makes you feel less guilty about indulging in chocolate chip cookies occassionally!
Will be using to make keto breads, pancakes, etc. Will mix with coconut and almond flours to make all kinds of bakery things.
Even did not expect so good taste. Perfect for backing.
Don't waste your money. It's extremely bitter. Enough said.
