This has transformed our fiesta night! I buy the boneless chicken thighs, toss some seasoning and some salsa on top in a slow cooker and it's done in 3-4 hours. It tastes incredible in quesadillas or soft tacos with just some cheese added. Everyone who has tried it so far loves it!
