Good Lima Beans

I buy these on occasion and use them as you would any beans in a stew. The only draw back is they were not available at my local Walmart and I had to order 3 two pound bags to be delivered so I have lots and lots of Lima Beans! Also I would recommend using them by the expiration date. Because of their size they are harder to cook the older they get.

It is wonderful that Great Value offers such a great variety of dried bean and pea products. They are very nutritious. The instructions on the package are easily understood and make preparation easy. I like to make a pound bag and use it throughout the week in salads, soups, to make dips, burgers, and as a main course. They are really versatile. They are shelf stable and they can even be planted in the garden.

How I Cook Dry Lima Beans

Lima Beans are very good for you and the fresher the better. However, it is very difficult to find fresh lima beans. I have found the Great Value Lima Beans to be about as good as any other dry brand of Lima Beans. A lot is simply to due with how you cook them. Take note that dry lima beans take a very long time to cook and there truly is not a big short cut. The short cut method is to clean them in water and then bring them just to a boil, remove and slow cook for an hour. NOT! Yes you can in fact do that but I will tell you due to varying slow cookers and varying dry lima beans, it is far from a good method. The best method and the SOUTHERN OLD FASHION METHOD is truly the best. Clean the dry lima beans in cold water, removing any foreign material that may be present and remove bad beans that simply don't look good and remove the beans that float to the top. After cleaning, rinse and fill the bowl of lima beans in cold water by adding at least two to three times the amount of water as beans. Place the bowl of cold water with dry lima beans in the refrigerator. Leave in the refrigerator for 10 hours. Yes, TEN hours. Placing in the refrigerator prevents souring/fermenting, almost totally reduces gas (no poot poot after eating), softens the beans and a shorter cooking time. Now you can remove the beans from the fridge, place the beans in either a stove top pot or a slow cooker. The beans will be fully done in 1 to 3 hours depending on the type of pot and heat setting you use. I bring them to boil in a pot on the stove, remove to a slow cooker, cook for two hours on medium heat. After the beans are cooking good, only then add additional ingredients such as ham bone, spices, etc. If you do it this way, your lima beans will come out very tender and tasty.

I love using dry beans in all our recipes. They taste way better than canned beans. All you need is a modern pressure cooker. Makes it so fast.

i have been wanting to find some large white lima beans and the prices for dried beans has really gone up recently. The average price per pound was a bit more than I was willing to pay. I was EXTREMELY pleased to find this deal of three 32-oz bags of Large Lima Beans for basically the price of 2-pounds everywhere else that I've checked. I have not yet actually cooked any, so I honestly can't rate the taste or texture. I've purchase other Great Value dried beans over the years and the taste and texture have been very good. I expect that these lima beans with be quite tasty as well.

OLD WAREHOUSE BEANS?

I am moderately disappointed with these lima beans in that the skins all split during the cold soak. They still tasted great but weren't as creamy either. I'm wondering if these are old and sat in a warehouse too long. All in all this won't stop me from buying again and hoping for fresher beans.

Displeased

While I received this product, the bag and product appeared discolred and perhaps a bag batch of Lima beans. The bag appears to have small holes like mice holes. I prepared a pot with th smoked neck bones I also purchased in the same order and the Lima beans are rotten. I will be requesting full refund for both items. This a whole meal wasted. Perhaps Walmart can have the staff check the shelving for mice holes before placing product into customers shopping bags.
