I cannot tolerate modern wheat. It gives me heartburn. So I heard this flour, which has not been genetically modified, might not cause me pain. Guess what? I can eat it without distress!! It is terribly expensive. But cutting out all flour in my diet is hard! The product arrived quickly and I can actually eat it so it's a 10 star product for me!

All our flour is GMO. Even those, like King Arthur's, are GMO. They did this in the 80's. Einkorn flour is an ancient grain that is NOT GMO. It is better for you. I use a bit of corn starch with it to keep it tender. I use this for toast only, pretty much.

Pumpkin spice oatmeal pancake made with einkorn flour. I just add one pack of pumpkin spice instant oatmeal to one cup of einkorn flour, add baking powder, salt, little oil, water and mix. No dairy. I use this flour to make pancakes, dumplings and to thicken soups and stews the natural way. I do recommend sifting this flour to remove the shells/meal pieces because it's sort of like a fine meal, so there may be little cracks in there so the flout will benefit from sifting and parceling off into jars. You get fluffier pancakes after sifting. Guess I'm on a pumpkin spice high too. I've never been and never once cared for it. But these taste really good, especially made with einkorn flour. I've always used instant oatmeal flavors in pancakes and the pumpkin spice and pecan flavor isn't bad. It's especially decent with the pumpkin butter spread on top the pancake instead of syrup. This is my second time purchasing einkorn from this company. I also like their other products. Definitely recommend.
