It has a Nutty flavor compared to regular wheat flour. Topped off the Gravy really nice ( Sausage Gravy ). It absorbs more liquids so I can use less flour. Just a awesome flavor added to the Biscuits.
this is great flour and hard to find. I am only supposed to eat spelt bread. So, I make my own. good for crackers,too

I LOVE the Spelt Flour muffin recipe on the bag. I was upset I couldn't find it again in any love cal grocery store, then I found the web site and ordered 4 bags. I make butter/powdered sugar/vanilla frosting, and spread on the Spelt muffins. Everyone loves them! I am a Spelt Flour girl now and forever!
I've been using this product for years ever since I was diagnosed with IBS/diverticulosis. I also have a family history of colitis. It was recommended to me that I should stay away from overly processed foods and get away from artificial things. I use spelt flour for everything that calls for all purpose flour (cookies,cakes,muffins,pancakes,waffles, coffee cake,dumplings) except bread. I don't eat bread not even gluten free kind.
Finding a decent GF bagel in N.Y. is not easy. Since we are GF by choice (not celiac) I discovered that Bob's Spelt Flour makes great bagels that are very close to GF. The ancient grain of spelt has enough elasticity to mimic real bagels and this spelt flour is fantastic. It's so good I've been stock piling it in case of another shortage.
The recipe called for about half spelt flour and half all purpose flour. The dough mixed easily and rose well; once in the oven it puffed perfectly in a couple of minutes. The pita is softer and tastier than any bought pita I've ever had. I can't roll perfect circles but freeform tastes just as good!
I bake my own bread and although I love the benefits of whole wheat, it does make for a dense loaf. Enter spelt - all the goodness of whole wheat but a bit lighter. I put it into all my loaves, usually at a 1:3 ratio with Bob's Artisan flour. The Dutch oven method makes bread baking a breeze, and the results are superlative.
