Bob's Red Mill products are very for cooking for a gluten free diet. The sorghum flour is very good for baking. Ideal for gluten free cooking.
Quick and simple process

Bob's Red Mill sorghum flour is one of the three main ingredients in my gluten-free baking mix. I can generally substitute my baking mix for the given portions in recipes and you'd never know you're eating gluten-free. Although I've learned to add an extra tablespoon of my mix when baking cakes so they don't sink in the middle. You should taste my pancakes! I also use my baking mix as a thickener for cream sauces and soups.
I have made sorghum buttermilk waffles and pancakes and they are great! My cousin recommended sorghum flour to me as a gluten free option for my husband and I didn't expect much, but I have been surprised at how much we like it. It was hard to find, so I was happy to find it at Swanson and at an affordable price.
For years have used sorghum and spelt in place of white flour. Always brought your sorghum but now stores here don't carry it. They carry your other products but not sorghum so I am going to buy it on line from you. Also getting harder to find spelt and will start buying that from you on line. Also use your oat flour.
The Better Homes and Gardens test kitchen came up with a gluten free flour recipe that you can substitute cup for cup for regular all purpose flour in your recipes and so far, I cannot tell the difference! The final product is light, moist and rises like all purpose flour. So far I have made bar cookies and pumpkin bread with fantastic results. Recipe uses White Rice flour, Sorghum flour, Potato starch and Xanthan Gum.
Very new to using Sorghum flour and had tried recipes that indicated that you could replace regular flour to sorghum flour in a 1:1 ratio without much success. Just tried using the recipe found on the back of the package, tweaked to preference and am quite happy with the texture. The baking time was for 60 minutes at 350F and my Honey Banana Loaf came out a bit too burnt on the top & sides for my liking.
I was very unhappy with the Arrowhead Mills Organic Millet Flour as the product is past the expiration date!
